Lavolio Confectionery is all handmade using a traditional artisan technique still alive in Italy. Each seriously sophisticated sweet takes up to five days to make, giving each one its own unique identity. The expert chocolatiers start by making the ‘heart’ of the sweets by toasting nuts, candying real pieces of fruit, or hand-pouring their apple-based vegetarian jelly. Then they add chocolate or spices one layer at a time. Finally, all of their sweets are delicately spun to form the crunchy sugar shell that naturally preserves their loveliness.
