Fruit Jellies are obtained by boiling a mixture of sugar and fruit juice.
Only fruits rich in pectin lend themselves to the preparation of fruit jellies. The acidity and sugar content also play an important role. Normally they use quince, currant, blackberry, blueberry, or apple, or a mixture that brings together a scented, but low in pectin, fruit (like blackcurrants or raspberries), with currants or apples.
The berries are mashed, or the fruits macerated in pieces including their core and their seeds. You then squeeze them within a muslin cloth to obtain the juice. In both cases, this operation is done hot with very little water. Then you pass the mixture through a very fine strainer. Add to it its weight in sugar, and cook. Pour a few drops into a cold plate to verify that the jelly sets (the drops should solidify quickly).
